Slow Cooker Lemon Chicken Soup

Inspired by the heroine in one of my favorite mystery series, I concocted my version of her "go to" soup. She is in the 1940's, so doesn't have a slow cooker. However, I love the aroma of soup cooking all day, so I opted for this method.

Ingredients

  • 2 Boneless, skinless chicken breasts, cubed
  • 2 Bay leaves
  • 4 Carrots, chopped
  • 4 Stalks Celery chopped
  • 3 Cloves Garlic
  • 1/2 Onion, diced
  • 1 Tbsp dried Rosemary
  • 1 tsp Turmeric
  • 8 C Chicken Stock (I use 8 C water and Better than Bouillon)
  • 1 C Orzo pasta
  • 1 Lemon, Zest and Juice
  • Salt and Pepper, to taste

Directions

  • Place all ingredients down through the Stock in the slow cooker and cook on low about 8 hours.
  • 1/2 hour before serving, put in the Orzo, Lemon juice, zest, salt and pepper.

Not all slow cookers have the same temperature, so check midway to see that your orzo isn't getting too mushy. If you don't have 8 hours, crank the heat up to high and you should have soup in 4-1/2 to 5 hours. Serve!
