QUICK RICE WITH BROCCOLI AND CHEESE

There are a number of rice side dish packaged mixes on the market. They are easy to fix and don't take very long, but they also have a lot of calories and sodium that you really don't need. Nor do they have the nutrients of fresh vegetables. This home made version is just as quick, cuts the negatives by more than half and gives you a good dose of fresh broccoli.

Ingredients

  • 1 Cup quick cooking brown rice
  • 1 Can (15 oz.) reduced sodium Chicken or Vegetable Broth
  • 3 Cups Broccoli florets, cut into bite size pieces
  • 1/4 Teaspoon Garlic Powder (optional)
  • 1 Can condensed Cheddar Cheese Soup (such as Campbell's)
  • 1/4 Teaspoon black pepper

Directions

  • In a medium sauce pan combine rice and broth.
  • Over medium heat bring to a boil.
  • Reduce heat, cover and simmer for 3 minutes.
  • Add the broccoli and garlic powder (if using), cover and cook another 4 minutes.
  • Stir in the soup and pepper and cook 2-3 minutes until heated through.

Makes six servings.
