Easy Spinach Dip

Summer is coming and it's time to think about party foods! This recipe is a great low-fat version of a popular dip that can normally contain a huge amount of calories and fat. The combination of ingredients is much lower in both and yet it keeps all of the wonderful flavors associated with a luscious dip.

Ingredients

  • 2 Cups low fat cottage cheese
  • 1 (10 ounce) package frozen chopped spinach, thawed, and squeezed dry
  • 1/2 Cup low-fat sour cream
  • 3 Tablespoons Hidden Valley Ranch Dip and Dressing Mix
  • 1/2 Teaspoon minced garlic
  • 2 Teaspoons reduced-sodium soy sauce
  • 1 (8 ounce) can water chestnuts, drained and finely chopped

Directions

  • Place cottage cheese in a food processor or blender and process until smooth.
  • Place in a medium bowl.
  • Stir spinach and remaining ingredients into cheese.
  • Cover and refrigerate until ready to serve.

Offer dip with an assortment of crackers, chips, or crispy fresh vegetables. Enjoy!
