Salmon Party Ball

Some recipes really stand the test of time and this is one of them. I've been making this since the early 1970s and it never fails to be well received. The ingredients are relatively inexpensive, preparation couldn't be easier, it travels well and even makes a nice hostess gift! The presentation is an elegant spot on your table. Give it a try for your next get together.

Ingredients

  • 1 - 16 oz. can Salmon
  • 1 - 8 oz. Cream Cheese at room temperature *
  • 1 Tablespoon fresh Lemon Juice
  • 2 Teaspoons grated Onion
  • 1 Teaspoon prepared Horseradish
  • 1/4 Teaspoon salt
  • 1/4 Teaspoon Liquid Smoke
  • 1/2 Cup chopped nuts (Walnuts, Almonds and Pecans all work well)
  • 3 Tablespoons Parsley Flakes

Directions

  • Drain and flake salmon removing skin and bones.
  • Mix with remaining ingredients, except nuts and parsley.
  • Shape into a ball.
  • Combine nuts and parsley and roll the salmon mixture in this to coat.
  • Cover and chill well.

Serve with crackers, or sliced baguette.

* A word to the wise, or the voice of experience here: Don't use fat free or reduced fat cream cheese. The moisture content of these variations prevent the formation of a ball. The taste will still be the same, but if you opt for one of these you will have to serve it in a dish as a softer spread.
